糖醋鱼片


主料:鲤鱼一条,黄葱二根。
做法:

1、做鱼片。鱼打整好后,刀从鱼背处开口,顺着鱼背处并贴近鱼刺慢慢理到鱼肚,鱼背上的一边肉就被片了下来,成一大块肉,然后,斜刀把肉切成小片,鱼片就做成了。

2、油炸鱼片。鱼片做成之后,用酒、胡椒、盐、姜腌入味.每片都平展开,扑上淀粉,等油烧到大约180度时,一片片放入油锅,炸到表面发硬变黄,捞出,沥干油。

3、整糖醋酱。锅里放1汤匙油,爆胡萝卜丝、青椒丝、姜丝、蒜米煸炒几下,变色后盛出来.然后加入半斤水、4汤匙糖+2汤匙蕃茄酱+3汤匙白醋+1/2茶匙盐,烧开之后,倒入水欠粉成糊状(加少量),关火加味精和鸡精,变成比较粘稠红亮的芡汁,滴入香油几滴,将鱼片及煸炒过的丝倒入锅中,翻匀后盛出锅.
