Espresso

 

辣子鸡丁


材料:鸡胸肉一盒,花椒(或者花椒油)和干辣椒,红尖椒,葱, 熟芝麻, 盐, 味精, 料酒, 酱油,食用油,蒜,白糖,鸡精,淀粉。  

做法:

1.将鸡切成小块放鸡蛋,淀粉,盐,酱油和料酒拌匀(最好加少许花椒油)后,味半个钟头。放入8层热的油锅中炸2到3分钟后捞起待用。干辣椒,红尖椒和葱斜切,姜蒜切片。  
酱汁:酱油,糖,料酒,盐,白醋,水。

2.锅里烧油至7层热,倒入姜蒜炒出香味后倒入干辣椒,红尖椒和花椒(或者花椒油),翻炒至气味开始呛鼻,油变黄后倒入炸好的鸡块,炒至鸡块均匀地分布在辣椒中后撒入葱段,鸡精,熟芝麻,投入调好的酱汁炒匀后加适量水淀粉起锅即可。
